Tasting Notes

Highly structured and polished, with attractive blue and dark berry aromas alongside black licorice and blackberry notes. Full-bodied and persistent, it rolls across the palate with chewy yet refined tannins and a long, focused finish.

Food Paring

Pair with grilled venison, roast lamb, or a peppercorn-crusted steak to meet the wine’s structure and depth. For a cheese pairing, choose aged manchego or extra-aged gouda to complement its dark-fruit intensity.

Professional Reviews

98 Descorchados

"Planted in 1992 on the alluvial terraces of the Maipo River in Puente Alto, in 1999 this former polo field began to yield one of the most indispensable cabernets in Maipo Alto in particular, and in Chile in general. It is grown on alluvial soils bathed by Andean breezes. Winemaker Francisco Baettig has been transforming the style of this wine and trying to showcase this historic Chilean terroir—the same place that gives rise to Don Melchor and Almaviva—as clearly as possible. Irrigation is managed to prevent water stress and keep the leaves green and active, and the fruit is protected from the zone’s abundant sunshine. And in the winery, extractions are lighter and the selected barrels have less toast than in the past. Last year marked a turning point, with a wine full of freshness and nerve. This year it has that same nerve, set against a backdrop of delicious red fruit. A cabernet that marks an entirely different territory and that is even tenser than the previous version."

Region Information

Valle Central is Chile’s most important wine‑producing region, extending across a broad area with varied subregions. Mediterranean climate conditions, cooling influences from the Andes and Pacific Ocean, and fertile valleys make it ideal for a wide range of grape varieties. Valle Central wines are known for ripe fruit character, balance, and consistent quality.

Chile’s unique geography, bordered by mountains, ocean, and desert, helps protect its vineyards from disease. The country produces reliable, high-quality wines with excellent value. Cabernet Sauvignon, Carmenère, and Sauvignon Blanc are key varieties. Chilean winemaking balances consistency, innovation, and strong export markets.
