Tasting Notes - Winemaker Notes "Domaine Michel Girault Sancerre “La Silicieuse” is made with the best Sauvignon Blanc grapes from 2 different plots located in Bue and Sancerre. This very special cuvee is very limited; Only 250 cases are produced. The Silex soil bring a lot of minerality and flintiness to the wine with a great freshness on the finish.Grapes are picked in the morning and go through 2 sorting tables. Grapes are pressed very gently and are fermented in stainless steel temperature control vats.Each plot is fermented separately to keep the true nature of each terroir.It is aged 3 months on its lees to give a nice rich mid palate"
