Tasting Notes

Faust Cabernet Sauvignon 2023 is elegantly structured, opening with cool forest notes, oak spice, bay laurel, underbrush, star anise, red and dark fruit, crushed stones, dried herbs, flowers, and salt-cured meat. The palate is polished and tightly woven, showing Luxardo cherry, blueberry compote, dark cocoa, cassis, silky fine-grained tannins, wet-slate minerality, and a long succulent finish.

Food Paring

Pair this Napa Valley Cabernet with beef, lamb, poultry, game, venison, or mature hard cheeses to complement its dark fruit, fine tannins, and polished oak spice. It is also an excellent choice for grilled steak, braised short ribs, burgers, and mushroom-forward dishes when you want a richly textured Cabernet with freshness and balance.

Professional Reviews

96 James Suckling

"Aromas of red and dark fruit, crushed stones, dried herbs, flowers and salt-cured meat. The palate is tightly woven with a silken mouthfeel, fine tannins and a succulent, minerally finish. A wine of real nerve and approachability young, with ample aging potential. A good example of what a cool vintage in a cool appellation can produce. Drink or hold."

95 The Wine Palate

"The 2023 Cabernet Sauvignon has a deep garnet-purple color. It's a little shy to start off, needing some shaking to wake up scents of black currant jelly, kirsch, and mulberries, plus underlying hints of licorice, dark chocolate, and tar. The full-bodied palate delivers bold black fruit and firm, fine-grained tannins with just enough freshness and an anise-laced finish. Drink 2026-2042"

94 Decanter

"Faust’s Cabernet Sauvignon in 2023 is quite pretty, reflecting the coolness of the vintage in its blue fruit and cassis aromatics laced with ironstone minerality and elegant unsmoked tobacco notes. Medium-bodied, it reveals supple black cherry and blackberry fruit tinged with cola nut and cherrywood, supported by a firm spine of zesty acidity and gentle, fine-grained tannins. A neatly compact, energetic, and elegant Cabernet for the vintage. Drinking window 2026-2036"

92 International Wine Report

"The 2023 Faust Napa Valley Cabernet opens with expressive aromas of ripe blackberry, dark cherry, and hints of cassis, layered with subtle earthy tones and warm spice that add complexity. On the palate, it shows a medium-to-full body with a smooth, velvety texture. The tannins are polished and well integrated, providing structure while maintaining an approachable, balanced feel. Elegant and harmonious, this Cabernet is enjoyable now and has the structure to develop gracefully over the coming decade. Drink 2026-2036"
