Tasting Notes - The only Cava produced in Ribeira del Duero! A blend of Macabeo (a.k.a. Viura) and Chardonnay, all estate fruit, biodynamically farmed. Bright, ripe, and round. 22 months of lees contact give the wine a pleasant toasty character, with notes of apple, tart peaches, candied and preserved lemons, and slate. Fine bubbles give a rich mouthfeel which resolves to a lingering mineral finish.
