Tasting Notes - Descorchados ""We worked for 7 years to get to this point,"" says Francisco Baettig, head winemaker at Viñedo Chadwick, speaking about the evolution of this red from El Tocornal in Puente Alto, planted on alluvial soils with abundant sand and stone in that legendary Maipo Alto zone. Irrigation is managed to prevent water stress and enable the leaves to stay green and active. The fruit is also well protected from the intense sun. And in the winery, they use gentler extraction and barrels with less toast. Only a third of this wine was aged in new barrels, and the rest went into foudres. The result is red and intense. We’re talking about the same terroir that gives rise to Almaviva and Don Melchor, where that freshness—that nervy character if you will—is absent, as it was for a large part of the history of this wine. The human hand has been essential here, the interpretation of what may be Chile’s most famous terroir cabernet sauvignon. And yes, it’s 100% cabernet, although you won’t believe it."
