Tasting Notes - Winery Notes "Spain's Penedès region, at the Ubac estate in Sant Joan de Mediona at an altitude of 500 metres amsl. Harvest was in early October.
Only a few hours (~8) skin contact to extract colour, then temperature-controlled fermentation in stainless steel tanks with yeasts present on the grapes. Second fermentation took place in the bottle with a minimum of 24 months aging on the lees. Bottles are disgorged individually, and only when required for market to ensure optimum condition of the finished wine. Dry (Brut) with 7 g/L residual sugar. Alc./vol. 11.5%. 32,000 bottles produced.
